Description: 1. 以下係我綜合咗好多香港網友（包括OpenRice、討論區、YouTube）多年試整經驗，復刻到最似哈迪斯黑椒粒粒雞飯嘅詳細做法，味道同賣相都九成似，試過十幾次先調到呢個版本，保證唔會失望！【哈迪斯黑椒粒粒雞飯（2-3人份）】材料： A. 粒粒雞（炸雞塊） • 去骨雞扒（雞上髑） 400g • 雞蛋 1隻 • 牛奶 2湯匙 • 鹽 1/2茶匙 • 糖 1/2茶匙 • 白胡椒粉 1/4茶匙 • 蒜粉 1/2茶匙（無可省）裹粉（兩次炸更脆） • 低筋麵粉 150g • 粟粉 50g • 鹽 1/2茶匙 • 泡打粉 1/2茶匙（關鍵！令雞塊更鬆化） • 白胡椒粉少少 B. 黑椒汁（最正宗版本） • 牛油 30g • 蒜頭（切幼粒） 4瓣 • 洋蔥（切幼粒） 1/4個（約50g） • 黑椒粒（現打粗粒） 1.5湯匙（一定要粗粒，先有「粒粒」口感） • 伍斯特醬（Lea & Perrins） 2湯匙（超級重要！係靈魂） • 生抽 1湯匙 • 老抽 1茶匙（調色） • 糖 1湯匙 • 蠔油 1湯匙 • 水 150ml • 粟粉水（1茶匙粟粉+2湯匙水）作芡汁 C. 配菜 • 熱白飯 2大碗 • 急凍雜菜（粟米、紅蘿蔔、青豆）適量（哈迪斯經典）步驟： 1. 醃雞（最少2小時，最好過夜） 雞扒切2cm方粒 → 加入蛋、牛奶、鹽、糖、白胡椒、蒜粉 → 拌勻按摩5分鐘 → 封保鮮紙放雪櫃。 2. 炸雞塊（兩次炸法，先脆後嫩） 裹粉材料拌勻 → 雞粒先沾薄粉 → 落6成熱油（170°C）炸2分鐘至淡金色 → 撈起 → 轉大火油溫180°C → 再落鍋炸30-45秒至金黃酥脆 → 即刻撈起瀝油。 3. 煮黑椒汁（10分鐘搞掂） 牛油落鑊中火熔 → 爆香蒜粒+洋蔥粒（唔好炒焦） → 落黑椒粒炒30秒（爆香） → 一次過落伍斯特醬、生抽、老抽、糖、蠔油、水 → 煮滾 → 試味（要夠椒香+微甜+嗰陣回甘） → 慢慢落粟粉水收芡，汁要濃到「掛雞」但又唔稠，離火。 4. 炒雜菜（1分鐘） 少少油落鑊 → 急凍雜菜快手炒熟 → 加少少鹽，盛起。 5. 裝盤（哈迪斯經典賣相） 白飯撲成長方形（用碗壓實） → 旁邊放雜菜 → 中間放炸雞粒 → 黑椒汁平均淋落雞粒（唔好淋飯，會淋飯先似） → 即刻上碟！終極秘訣（似足99%）： • 伍斯特醬一定用Lea & Perrins，唔好用其他牌或省略 • 黑椒粒一定要現打粗粒（用研磨器打到見到粒） • 雞塊一定要炸兩次 + 加泡打粉 • 汁要熱辣辣先淋，會更香！試咗呢個版本，連80後朋友食完都話：「係呢個味！細個放學同阿媽排隊買嗰個！」快啲試整啦～整完影張相同我講似唔似呀！?✨
